Sautéed Kale with Crunchy potatoes and a poached egg – paleo, vegetarian, and gluten free



Hello Deliciousness,

Egg-whites Schmeg-whites…. look at this healthy delicious nutritious breakfast! I decided I wanted to try something new for breakfast and came across this goodie. It’s so simple but seriously delicious. I really have nothing bad to say about this recipe and no recipes. I personally enjoyed this with some Franks Red hot overtop. I did include some additional instructions on how to cook a delicious poached egg.. which by the way is very simple! This recipe would also be delicious with some spinach and if you are not comfortable cooking a poached egg then a simple egg over easy will do just fine. You just need that deliciousness of the yoke to ooze over the top of the kale and potatoes.

Recipe as follows:

  • 4-5 leaves kale
  • 2 new potatoes
  • 1 clove garlic
  • 1/2 tablespoon olive or neutral oil
  • 1 egg
  • to taste salt and pepper
1.) Remove stems from kale, chop into bite-sized pieces. Slice potatoes into uniform circles, about 1/8-1/4 inch. Too thin and they’ll burn, too thick and they won’t cook through. Mince garlic.
2.) Heat oil in cast iron or non-stick pan over medium-high heat. Add potatoes in a single layer and let cook without moving for 3-5 minutes until golden brown.
3.) Flip potatoes and cook another 3 minutes. Reduce heat to medium and add kale. Stir so all kale comes in contact with the pan and wilts. Add a teaspoon of water and stir briskly to soften kale.
4.) Bring a small pan of water to a simmer. Add an egg and let simmer on low while you finish cooking the vegetables.
5.) When potatoes are golden brown and cooked through, add garlic and cook for 1 minute until fragrant. Add salt and pepper.
6.) Serve vegetables topped with poached egg. Feel good about starting your day.

Prep time: 4 mins – Cook time: 8 mins

Simple Poached egg:

-Crack egg into a small bowl, or something that will allow you to gently drop egg into the boiling water.
-Bring water to a rapid boil.
-Swirl water to make a whirlpool
-Quickly as water is still turning gently drop your egg into the spinning water
-Turn off heat, cover, and let it sit for 4 minutes
-With a slotted spoon removed the egg!

Ground Chicken/Turkey Caprese Burger




So this week I bought a ridiculous amount of this ground chicken this week thinking “oh its 40% off let me buy 5lbs of it” and be completely in denial of that fact that it was going to expire in 5 days… and…I had NO room in my freezer.. but that’s besides the point. So as I’m in a panic to use up my ground chicken, I search Pinterest and decided to try out this recipe for turkey burgers.

Now normally I would mix half turkey/chicken with half beef. Reasoning for this is you still get the awesome flavor of the beef but can decrease the fat content by mixing in the ground turkey/chicken. The choice is yours.

Recipe as follows:

1 lb. ground turkey meat (prefer thigh meat)
1 medium red onion, finely chopped
1/2 cup fresh parsley, minced (or whatever fresh herbs you like)
1 tbsp garlic powder
1 tsp salt
1 tsp pepper

My additions:

1/2 tbsp-tbsp of butter/ghee per patty
1 beefsteak tomato (or ones that look the freshest)
a few slices of sun-dried tomatoes chopped (add to taste)
a few sprigs of fresh basil


Mix ingredients together and form 4-6 patties. Grill on medium heat for 7 minutes a side. 2 minutes before burgers are done, place a slice of cheese (optional) on each patty. Serve hot.

With an all ground turkey meat burger I like to add a little less than a tablespoon of butter or ghee to the middle of the patty, almost like a filling. I know it’s not fat free, but in order to get a juicy burger, you have to add some type of fat to the burger.

Now lets talk toppings…. because I am located in the Italian capital of the US aka New Jersey I was able to get some oh so fabulous fresh Mozzarella, as well as some banging tomatoes so I decided to do a spin on a caprese salad.

About two minutes into flipping the patty I added the slice of tomato and fresh mozzarella. Side note I do recommend using a thermometer to check the temperature of the burger, undercooked chicken/turkey=no good(you know that thing called salmonella)  overcooking=no good(hockey puck burger)… golden temperature=160-165F … After the patties are cooked, add the chopped sun-dried tomato and fresh basil. Serve over lettuce and enjoy!

I served this burger on a  bed a lettuce with a side of sweet potato fries, which of course I will be posting.. just not today… sorry friends you’ll have to wait for that one!

Summer Salad w/ Grilled Pineapple and Blueberries



OMFG… no seriously… it’s that good… like i’ve had it 3 times this week good

This salad is a delicious summer salad that contains all sorts of yummy delicious healthy ingredients. I do recommend using fresh pineapple and maybe even glazing it with a bit of honey to give it some extra deliciousness. I am an avocado lover, but this omitting won’t be missed because their are so many other goodies in here. Also I decided to add some slivered almonds to give it some crunch. Welcome to Whats for Pinner! I hope that you enjoy this blog, and my newest adventure, and I’m so happy that I can share my passion for food and photography with you! Because I am a mom, I get it… you don’t 40 minutes to prep a meal, another 40 to cook it, then another 30 to clean up… I mean what’s 2 hours of cooking all while you have a screaming child at your ankles, maybe one screaming from the bathroom that they need you to wipe their rear end. No but seriously, I swear I understand. Whether you’re a mom, a dad, a teacher, a student, or an officer, whatever it may be, we all live in a busy world.
